Leading a trend: Organic crops, livestock on the rise

ARLINGTON —The organic food movement has long been dominated by fruit and vegetable growers. Increasingly, products of mainline farming operations — soybeans, corn, alfalfa, cows, pigs and chickens — are in demand organically.
Minnesota is the No. 1 producer nationally of organic corn, soybeans and edible beans, said Jim Riddle, organic outreach coordinator with the University of Minnesota.
